Does a hair turn gray all at once or does it start growing gray? Would a hair ever be 1/2 black, 1/2 gray?

When I see them, I pluck them. I have never found a 1/2 gray hair (I have a mop of hair – 2″). This leads me to believe you could never get a 1/2 gray hair. So what happens?
